Ingredients

6 ½ pounds apples peeled, cored and sliced

1 cup granulated sugar

1 cup light brown sugar, lightly packed

1 tablespoon ground cinnamon

½ teaspoon freshly grated nutmeg

¼ teaspoon salt

1 tablespoon pure vanilla extract

Instructions

  1. Place apples in a Instapot. Add all ingredients with the apples except for vanilla extract.
  2. Set Instapot to Pressure cook on high for 1 hour and 30 minutes. Make sure release valve is turned ON.  After 1 hour and 30 minutes.  Carefully release the pressure by turning the pressure valve to release.  Let it naturally release the pressure for at least 10 minutes.
  3. Remove lid and use an immersion blender to puree the apple butter until smooth.
  4. Turn Instant Pot to “Slow Cook” and cook on high for 2 hrs. Replace lid on top of pot halfway and do not latch to allow steam to release.  Stir apple butter once in a while.  Be careful of splatters, as the apple butter thickens, the apple butter will bubble and will splatter.
  5. The “Slow Cook” step is essential to dry out any excess liquid and to get to desired thickness. Additional time may be needed until the apple butter can be scooped with a spoon and it doesn’t fall off the spoon.  Another way to test when Apple Butter is done is by scooping with a spoon and placing a dollop of apple butter on a small plate.  Wait a few minutes and if there are no excess liquid running out of the apple butter, then it’s done.
  6. Stir in vanilla extract and let cool for about 30 minutes.
  7. Transfer to a container. Refrigerate up to 2 weeks or freeze.

 

Use varieties of apples such as granny smith, cortland, fuji, etc.  Using whatever apples for apple pie works best.

 

Sugar can be adjusted based on sweetness desired.
