Ingredients

1 cup granulated sugar

5 tablespoons unsalted butter

1/2 cup heavy cream

1/2 to 1 teaspoon maldon sea salt flakes or regular sea salt

INSTRUCTIONS:

 

  1. Measure and set aside all ingredients prior to starting the sauce.
  2. In a small sauce pan, add the granulated sugar and heat over medium-high heat.  When sugar starts to melt, start whisking the sugar.  It will be clump, but keep whisking.  It will slowly continue to melt.  Swirl the pan to move the sugar around.
  3. Continue cooking the sugar until it reaches a deep amber color. Watch the pan very closely as to not burn the sugar.
  4. As soon as the sugar reaches deep amber color, carefully add the cubed butter.  Stir until butter is melted.
  5. Remove pan from heat and slowly add heavy cream. Whisk until cream is incorporated and caramel is smooth.  Whisk in the sea salt.
  6. Let the caramel sauce cool in the pan for 10 minutes.  Whisk and pour caramel into a jar and cool to room temperature.
  7. Store in the refrigerator for about a month.  The caramel will harden a bit.  Heat in the microwave 15 – 30 seconds until pourable.
