Ingredients

Apples:

1 pound granny smith apples, peeled and thinly sliced

2 tablespoons sugar

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

2 tablespoons unsalted butter

2 tablespoons light brown sugar, packed

1/8 teaspoon all spice

1 teaspoon cinnamon

 

Cake batter:

8 tablespoons unsalted butter, melted

1/2 cup + 2 tablespoon granulated sugar

2 large eggs, room temperature

1 teaspoon  pure vanilla extract

1 1/3 cup Hand + Heart Gluten Free All Purpose Flour

1 1/2 teaspoon salt

1 teaspoons baking powder

 

Caramel Cream Cheese:

8 oz full fat cream cheese, softened to room temperature

1 large egg, room temperature

3 cups powdered sugar plus more for dusting

1/3 cup prepared salted caramel sauce 

Instructions

INSTRUCTIONS:

 

Prepare the apples:

  1. Peel and core apples and thinly slice to 1/8 inch thick.
  2. In a medium bowl, add the apples, 2 tablespoons granulated sugar, zest and lemon juice.  Mix with a spatula and let sit in the refrigerator for 30 minutes.
  3. Cook the apples: After 30 minutes, drain apples and set aside.  In a medium sauce pan, add 2 tablespoons butter.  Once melted, add brown sugar, allspice and cinnamon.  Whisk until sugar is dissolved. Add drained apples and cook for 8 – 10 minutes until apples are tender.  Transfer to a small bowl and let cool for 10 minutes.

 

Make the cake batter:

  1. Preheat oven to 325ºF.  Spray the bottom and sides of a 9” springform pan.  Cut a square parchment paper and line the sides and bottom of the pan. The oil should help the parchment paper stay on the sides and bottom of the pan. Fold the parchment paper all around the inside of the pan so it’s flushed with the inside of the metal rim. Remove any excess parchment paper hanging on above the rim.
  2. In a large mixing bowl, use a whisk to mix melted butter and granulated sugar.  Add the eggs and vanilla extract and whisk until well incorporated.
  3. Add Hand + Heart Gluten Free All Purpose Flour, baking powder and salt and mix with a spatula until just combined.  Do not overmix.
  4. Add the cooked apples and gently fold in with the batter.
  5. Pour the prepared batter into the prepares pan. Set aside

 

Make the caramel cream cheese:

  1. Preheat oven to 350ºF.
  2. In a medium bowl, use a hand mixer and whip the softened cream cheese until soft.  Add egg and mix to combine.  Scrape the sides and bottom of the bowl and add half of the powdered sugar, mix until well incorporated.  Scrape the bowls again and add the remaining half of powdered sugar and mix until well incorporated.  
  3. Scrape the bottom and sides and add the caramel sauce and beat until smooth.
  4. Pour the caramel cream cheese on top of the apple cake batter and use a spatula to evenly distribute and smooth the caramel cream cheese.

Bake for 50 to 60 minutes. Tent the pan with an aluminum foil after 45 minutes and add additional 5 minutes at the time.  Check doneness of the cake batter with a wooden stick.  Cake is done when stick inserted is no longer sticky from the batter.  The edges of the cake will be golden brown and the center will be wobbly.
