Ingredients

INGREDIENTS:

 

1 prepared pie dough recipe

 

Apple Filling:

1 1/2 lbs. (about 3 large) Granny Smith Apples, peeled and diced

1/4 cup granulated sugar

1 teaspoon ground cinnamon

Pinch of nutmeg

2 tablespoons lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

 

Crumble Topping:

1 cup Hand + Heart Gluten Free All Purpose Flour

1/2 cup granulated sugar

1/2 cup light brown sugar, packed

1/2 teaspoon kosher salt

2/3 cup chopped pecans, walnuts or rolled oats (not instant)

10 tablespoons unsalted butter, cold and diced

 

Prepared caramel sauce (recipe link here)

Instructions

INSTRUCTIONS:

 

  1. Preheat oven to 350ºF.
  2. Spray 2 muffin pans with cooking oil, set aside.

 

Prepare the Pie Crust:

  1. Roll pie dough into 18 inch log.  Divide into 24 equal portions.  Add cut dough into prepare muffin tins and press the dough on the bottom and sides of the muffin tins, about 1 inch up the sides. Repeat until all the dough has been pressed in all 24 muffins.

 

Make the Apple Filling:

  1. In a small sauce pan, add all the Apple Filling ingredients and mix to combine.  Set heat to medium and cook for 5-7 minutes until the apples are softened.  The sauce will thicken so stir constantly to prevent bottom from burning until the apples starts to soften.

Make the Crumble:

  1. Add gluten free flour, 1/2 cup sugar, 1/2 cup brown sugar, salt and nuts or oats to a bowl and  combine.  Use a hand mixer or pastry cutter.

 

Assemble the Cups:

  1. Add 1 tablespoon of apple filling to each muffin well.
  2. Add 2 tablespoon of crumble topping on top.
  3. Spray top with a cooking spray to set the crumble topping.

 

Bake the Apple Crisp Cups:

  1. Bake 20 – 25 minutes until the tops starts to brown.  I like to broil the top for 2 minutes to further brown the crumble toppings.
  2. Let cool completely before carefully removing from the muffin pan.  The syrup from the apple filling is very hot.
