Ingredients

INGREDIENTS

 

1 cup unsalted butter, slightly softened

2/3 cup granulated sugar

1 teaspoon vanilla extract

3/4 teaspoon sea salt

2 cups less 2 tablespoon Hand + Heart Gluten Free All Purpose flour, scoop and leveled

2 tablespoons dry milk powder

Instructions

INSTRUCTIONS:

 

  1. Preheat oven to 325ºF. 
  2. Line an 8×8 inch baking pan with parchment paper with 1 inch overhang on each side.  Use 4 small binder clips to hold parchment paper folded over each rims of baking pan.
  3. Using a hand mixer or stand mixer fitted with a paddle, cream the butter, sugar, salt and vanilla on low speed until combined then increase the speed to medium.  Mix until light and creamy, about 2-3 minutes.  Scrape down sides and bottom of the bowl and add the gluten free flour and milk powder.  Mix on medium until butter and flour is combined.  Do not overmix.
  4. Add the dough into the prepared baking pan and place another parchment paper on top and evenly spread the dough into the pan.  Use a spatula to flatten top.
  5. Use a fork to lightly prick the surface of the dough evenly.  Cover with plastic wrap and refrigerate for  30 minutes or pop in the freezer for 15 minutes.
  6. Bake until golden brown, about 30 – 35 minutes, adding additional 3 minutes if needed.
  7. Cool in the pan for 10 minutes.  While the biscuits are still hot, use a sharp knife to lightly score the top into even rectangular sizes.  If desired, sprinkle the top with about 1 tablespoon granulated sugar while warm.
  8. Let it cool completely before carefully lifting the parchment paper from the baking pan.  Use a long sharp knife to slice the lines to separate the portions.  The cookies will be very tender and crumbly so resist the urge to slice the cookies before it’s cooled completely.
