Ingredients

INGREDIENTS:

 

Tarte Shell Ingredients: Shortcut Pastry

½ cup (1 stick) unsalted butter soft, room temperature

1 tablespoon non fat milk powder

1 teaspoon vanilla extract

50g Icing Sugar – sifted

1 large egg – at room temperature

50g Almond flour

200g Hand + Heart Gluten Free All Purpose Flour 

1/8 teaspoon sea salt

 

Caramel Layer:

2/3 cup caster sugar

1/4 cup water

1/2 cup hot cream

1 1/2 tablespoon unsalted butter

Small handful of toasted hazelnuts, chopped

 

Chocolate Layer:

170g milk chocolate, chopped

1/2 cup heavy cream

4-5 whole toasted hazelnuts

Instructions

INSTRUCTIONS:

 

Make the Tarte Shell:

  1. Preheat oven to 340ºF. Butter bottom and sides of tart pan and set aside.
  2. Cream butter and sugar until light and fluffy. Add vanilla, egg, almond flour and mix until blended.Add gluten free flour and beat until smooth. 
  3. Place between cling wrap and parchment paper.  Roll until slightly larger than a 9” torte pan.
  4. Prick bottom with fork.  
  5. Bake 340° for about 15 minutes. Brush the tart shell (1 yolk, drizzle of oil, dash of cream) and bake for another 25-30 minutes. Until golden.
  6. Let cool before filing.

 

Make the Caramel Layer:

  1. In a small sauce pan, add sugar and water and heat over low-medium until it turns into a deep golden color. Keep an eye on it as it will quickly burn.
  2. Remove from heat and add hot cream and whisk, be careful of the steam.
  3. When fully incorporated, add butter and stir until melted. Pour into cooled tart tin and top with hazelnuts. Set in the fridge for 30 minutes to 1 hour.

 

Make the Chocolate Layer:

  1. When the caramel has set in the tart tin, combine chocolate and heavy cream in a medium bowl and heat in the microwave for 45 seconds.
  2. Stir, then heat for another 30 seconds. Stir until smooth and creamy, then pour over the caramel layer. Set in the fridge for 1 hr.
