Ingredients

Apple fritters:

  • 1 1/2 cups Hand + Heart Gluten Free All Purpose Flour (1 to 1)
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/3 cup + 1 tablespoon milk or dairy free milk
  • 2 large eggs, beaten
  • 3 tablespoons apple sauce
  • 2 large Granny Smith Apple, peeled, cored and diced
  • Canola oil or vegetable oil for frying

 

Glaze:

  • 2 cups powdered sugar
  • 1/4 cup milk or dairy free milk
  • 1 teaspoon vanilla extract

Instructions

Make the batter:

  1. In a medium bowl, add the flour, sugar, baking powder, salt and cinnamon. Whisk to combine.
  2. In a separate small bowl, mix milk, eggs and applesauce and whisk to combine.
  3. Add the milk mixture into the flour mixture and stir just to combine. Do not over mix.  The batter will be thicker than a pancake batter.
  4. Fold in diced apples.

 

Fry the fritters:

  1. Heat 2 inches of oil in a heavy skillet or Dutch oven to 350ºF . Drop about ¼ cup of batter into the oil and spread the batter as you drop to flatten the top. Do not overcrowd the pan. Cook each side until golden brown, about 2 minutes on each side.
  2. Use a slotted spoon to remove the fritters and drain on top of a paper towel lined plate or on a cooling rack to drain.

 

Make the glaze:

  1. Mix all the glaze ingredients and whisk until smooth. Drop fritters into the glaze and turn the fritters over to make sure all sides are well coated with the glaze.
  2. Place on the cooling rack to air dry and drip.

 

Notes:
Gluten Free Apple Fritters are best enjoyed the same day it is made.
Store leftover fritters in an airtight container up to 2 days and heat in the microwave for a few seconds before serving.
