Gluten Free Apple Orchard Cider Donuts

Ingredients

3/4 cup fresh apple cider, reduced down to ¼ cup

3 tablespoons unsalted butter, room temperature

1/2 cup granulated sugar

1 egg

¼ cup buttermilk

1 teaspoon vanilla extract

1 3/4 cup Hand + Heart Gluten Free All Purpose Flour

1 teaspoon baking powder

1/2 teaspoon baking soda 

1/4 teaspoon allspice

3/4 teaspoon cinnamon

1/2 teaspoon salt

 

Glaze:

1 cup powdered sugar

2 tablespoon apple cider

 

Cinnamon Sugar:

3/4 cup granulated sugar

2 teaspoons ground cinnamon

Instructions

Reduce the Apple Cider:

  1. In a small pot, bring the apple cider to a boil.  Simmer until it is reduced down to 1/4 cup, about 20 minutes.  Set aside to cool.

 

Make the dough:

  1. Using a stand mixer, beat the butter and sugar together until light and fluffy.  Add the egg and beat well until combined.  Stir in buttermilk, vanilla, and the reduced 1/4 cup cider.  Mix in low speed until combined.
  2. Combine gluten free flour, baking powder, baking soda, salt and spices in a small bowl.  Whisk to combine.
  3. Add the flour mixture to the wet ingredients and stir until just combined.

 

Freeze & cut the dough:

  1. Line a cookie sheet with parchment paper and dust with flour.
  2. Place the dough on the cookie sheet and flatten it out with your hands until about 1/2 to 3/4 inch thick.  Place a plastic wrap on top of the dough to make it easier to flatten.
  3. Place cookie sheet with the dough in the freezer and freeze for about 20 minutes.  The dough will be firm and will be easier to cut.
  4. Cut the dough using a 2 3/4 inch cookie cutter, use a smaller cookie cutter to cut the hole in the center.  It makes about 8 donuts and 8 holes.  Return the cut donuts in the freezer for 10 minutes to firm up again.

 

Fry the dough:

  1. While the donuts are in the freezer, heat 3 inches of vegetable oil in a deep pan until it reached 350ºF.   
  2. Make the glaze.  In a small bowl, whisk powdered sugar and apple cider until smooth.  Set aside.
  3. Remove the pan from the freezer and cut the parchment paper around the dough so each paper has a piece of donuts.
  4. Carefully slide the parchment paper with the donuts into the oil.  Remove the parchment paper from the oil with a pair tongs. Carefully separate the donut with the donut hole so they do not stick together.
  5. Fry donuts for about 1 minute on each side until golden brown.
  6. Remove from oil and transfer to a cookie cooling rack to drain excess oil and cool for a minute.  Dip both sides into a glaze or coat with cinnamon sugar.
