Ingredients

  • 2 1/2 cups Hand + Heart Gluten-Free All Purpose Flour (1-to-1)
  • 1 teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1 cup  brown sugar tightly packed
  • 1/2 cup granualted sugar
  • 1 1/2 teaspoon sea salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups chocolate chips
  • 18 jumbo marshmallows

Instructions

  1. Preheat oven to 350°F and line 2 baking sheets with parchment paper. Set aside.
  2. In a large bowl, use a hand mixer to cream butter, add brown sugar, granulated sugar and salt.
    Add in eggs and vanilla and beat until smooth.
  3. Stir in baking soda, salt, and flour and mix until it forms a nice dough. Stir in chocolate chips with a wooden spoon.
  4. Use an ice cream scooper about  4 tablespoons.  Flatten the dough and wrap the marshmallow with the dough making sure the marshmallow is completely covered.
  5. Bake in the preheated oven until edges are slightly brown. Do not over bake.
  6. Remove pan from oven and let the cookies cool on the pan for 3 to 5 minutes.
  7. Transfer to a wire rack to cool completely.before eating!
