Ingredients

INGREDIENTS

 

1 cup unsalted butter, room temperature

1 cup packed light brown sugar

1/4 cup granulates sugar

2 large eggs, room temperature

1 tablespoon vanilla extract

1 tablespoon unsulphured or dark molasses

1 1/2 cups Hand + Heart Gluten Free All Purpose Flour

1 teaspoon baking soda

1 1/2 teaspoon ground cinnamon

Pinch of nutmeg

1/2 teaspoon sea salt

3 cups old-fashioned whole rolled oats (certified, not instant)

1 1 /4 cups raisins, soak in warm water for 30 minutes, blot with a paper towel to dry

1/2 cup chopped toasted walnuts, optional

Instructions

INSTRUCTIONS:

 

  1. In a separate bowl, whisk the gluten free flour, baking soda, cinnamon, and salt. Set aside.
  2. Using a stand mixer fitted with a paddle attachment, cream the butter and both the sugars together on a medium speed until smooth and fluffy, about 2-3 minutes.  Add the eggs and mix on high until combined.  Scrape down the sides and bottom of the bowl and add the molasses and vanilla extract and mix again for a few seconds until combined. Add the flour mixture and beat on low until combined. Fold in the oats, raisins and walnuts if using until well combined.
  3. Dough will be thick and very sticky.  Chill the dough for 45 minutes.
  4. Preheat the oven to 350ºF.  Line 2 large baking sheets with parchment paper.
  5. Use a large cookie scoop, about 4 tablespoons, and roll into a ball. Place the dough 2 inches apart on a baking sheet.  You may decrease the size of the cookies to 2 tablespoons each which will yield double the quantity.
  6. Bake for 14 – 18 minutes until the edges are lightly browned.  The center will look under-baked.  Let cool in the pan for at least 5 minutes before transferring to a wire rack to cool.

 

NOTES:  If chilling for more than 45 minutes, let the dough rest on the counter for at least 30 minutes before scooping and forming into a ball.
