Ingredients

Make the Dough:

 

To coat the dough balls:

  • 1/4 cup melted butter

 

To shake the dough balls:

  • 1/2 cup brown sugar
  • 1 1/2 teaspoons cinnamon

 

For the syrup:

  • 1/2 cup salted butter melted
  • 1/2 cup brown sugar
  • 1 teaspoons cinnamon

 

To pour over the top:

  • 1/2 cup heavy cream

 

For the Cream Cheese glaze:

  • 1 cup powdered sugar 130 grams
  • 2 oz cream cheese (optional, increase heavy cream to 1/3 cup if not using)
  • 4 tablespoons heavy cream 2 ounces
  • 1/4 teaspoon vanilla extract

Instructions

Make the dough:

  1. Gather all the ingredients to make the dough using Hand + Heart Gluten Free Sweet Dough Mix and follow the process to make the dough.
  2. Use half of the dough prepared to make a batch of this Gluten Free Cinnamon Roll bites.  To make a full batch, double the ingredients listed above.

 

Prepare the bites:

  1. Using half of the prepared Sweet Dough, roll dough into a rope about 1” in diameter.  Cut into 3/4 – 1 inch  and roll the dough between the palm of your hands to form into a ball. Makes about 45-50 balls.
  2. Coat balls in butter and then toss in the brown sugar cinnamon mixture.

 

Proof the bites:

  1. Arrange balls inside a 10” cast iron pan.  And let rise for 30 min to 45 min until it has doubled in size.
  2. Preheat oven to 350ºF.

Bake the bites:

  1. Once proofed, drizzle 1/2 cup heavy cream on top of the bites.
  2. Bake for 25-30 minutes until bites are golden brown.  Check the bites at the bottom of the pan to make sure it’s baked.
  3. While the bites are baking, mix cream cheese glaze in a small bowl with a hand mixer until smooth.
  4. Spread glaze on top of bites once baked.
