Ingredients

  • 1 cup Hand + Heart Gluten Free All Purpose Flour (1 to 1)
  • 1 cup corn meal
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 egg
  • 1 1/4 cup milk + 1/4 cup more as needed
  • 1 teaspoon apple cider vinegar
  • 2 tablespoon melted butter or coconut oil
  • 8 hot dogs
  • Popsicle or craft sticks
  • Oil for frying (vegetable, canola, avocado, anything neutral)

Instructions

  1. In a large pot, heat 4-inches of oil to 340ºF.
  2. In a mixing bowl, whisk all dry ingredients and set aside.
  3. In a separate mixing bowl, combine all the wet ingredients and whisk to combine.
  4. Combine wet ingredients with dry ingredients and whisk to combine until no more flour lumps. The batter should be thick but not too thick.  add additional milk if needed to loosen the batter.
  5. Pat each hotdog dry with a paper towel and cut each hotdog into 3 pieces.   Drying the hotdog is to make sure the batter sticks to the hot dog.
  6. Using a long wooden skewer, stick a piece of hot dog  and dip into the batter.  Make sure the hot dog is completely covered with batter.  Add the corndog into the oil and use another stick to remove the wooden stick from the hot dog bites.  Add 4 – 5 bites into the oil without overcrowding them.  If the batter becomes too thick add milk 1 tablespoon at a time until desired consistency is reached.
  7. Fry each corn dog bites until golden brown, about 3-4 minutes per corndog. Put on a plate lined with paper towels to drain.
