Ingredients

  • 2 1/4 cups Hand + Heart Gluten Free All Purpose Flour (1 to 1)
  • 2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups buttermilk (or oat milk with 1 1/2 tablespoons lemon or white vinegar)
  • 3 tablespoon granulated sugar
  • 3 tablespoon light olive oil
  • 2 large eggs
  • 1/2 cup shredded sharp cheddar cheese or dairy free cheddar
  • 1 1/2 – 2 cups shredded sharp cheddar cheese
  • deli ham

Instructions

  1. Preheat oven to 425ºF.
  2. Line a large baking sheet with parchment paper or  spray muffin top baking pan with gluten-free oil spray. Set aside.
  3. In a large bowl, whisk together gluten free flour, baking powder, baking soda, and salt, set aside.
  4. In a separate mixing bowl, whisk together the buttermilk, granulated sugar, oil and eggs until fully combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined, making sure not to over mix the batter.
  6. Add cheddar cheese and fold.  Scoop about 2- 3 tablespoons dough onto the baking sheet or use a large ice-cream scoop 3 inches apart. Flatten slightly and add a layer of cheese, ham and more cheese.  Top with additional scoop of batter,  Slightly spreading the batter.
  7. Bake for 18-20 minutes until golden brown and a toothpick inserted into the center comes out dry and not sticky.
  8. Brush tops with melted butter after baking.
