Ingredients

2 cups Hand + Heart GF All Purpose Flour

2 cups granulated sugar

2 teaspoons baking soda

1 tablespoon baking powder

1/2 teaspoon salt

2 eggs, lightly beaten

2 cups crushed pineapple (drained)

 

Icing:

1 cup granulated sugar

½ cup unsalted butter

2/3 cup oat milk

1 cup unsweetened shredded dried coconut 

1 teaspoon vanilla

1 cup chopped pecans

Instructions

  1. Preheat oven to 350ºF.
  2. Grease a 9 x 13 inch cake pan with butter or oil spray and set aside.
  3. In a large mixing bowl, add all the dry ingredients and whisk with a spatula to combine. 
  4. Add the lightly beaten eggs and drained crushed pineapple and mix until well incorporated.
  5. Transfer to the prepared cake pan and smooth the top and edges.
  6. Bake for 40 – 45 minutes until wooden stick inserted in the center comes out clean.

 

Make the Icing:

  1. White the cake is baking,  add sugar, butter and milk in a small sauce pan and simmer for two minutes (stir constantly).
  2. Remove from heat. Add coconut, vanilla and pecans.
  3. Pour over cake while still warm.
